Simply Fresh Spring Strawberry Salad Delight
Paired with
Raeburn Chardonnay, Russian River Valley 2019 OR 2019 Raeburn Pinot Noir, Russian River Valley
There are several separate components to prepare the finished Simply Fresh Spring Strawberry Salad Delight. I am providing all times made from scratch and you can always make adjustments by buying already made items. I love making dishes that are homemade and can used throughout your week if items are not all used. This is great recipe for meal preparing or larger social events your life

Homemade Strawberry Poppy Salad Dressing:
Yield: (1) Cup
I use a Large Mason Jar with Wide Mouth opening to make dressing and to store if not all used.
Size Suggestion: 12oz or 16oz or 24oz.
Use larger Size Mason jar to mix and use hand held blender to emulsify ingredients.
Prep Time: 5 Minutes
Total TIme: 5 Minutes
Ingredients:
(1) Cup Fresh Strawberries Slices (I chop them in pieces to make blending easier)
(2) Tablespoons Red Wine Vinegar
(1) Tablespoon Lemon Juice
(2) Tablespoons of Honey
(1/4) Teaspoon Salt (use Sea Salt or Pink Himalayan Salt). NO Table Salt…..It’s processed and not a great product.
(1/4) Cup Extra Virgin Olive Oil
Instructions:
Add all ingredients to the Mason Jar and then use hand held hand mixer to emulsify all ingredients together. I add in (2) Teaspoons of poppy seeds at end or you can add directly on top of salad as more of a garnish.
*if you have any digestive issues with seeds you can leave off Poppy Seeds and also change out strawberries for Blueberries.
Candied Pecans: Prep Time: 5 Minutes Cook Time: 15 mInutes Total Time: 20 Minutes Yields: (3) Cups Candied Pecans are a perfect snack & just lovely on top of salad or even on baked Wild Caught Salmon Ingredients: (2) Tablespoons Salted Butter (3) Cups Pecan Halves (1/2) Cup Light Brown Sugar (1/2) Teaspoon Cinnamon (1) Teaspoon Kosher Salt or Sea Salt (1/4) Cup Water (1) Teaspoon Vanilla Instructions:
Preheat oven to 350*F. Line a baking sheet with parchment paper and set aside.
In a large skillet, melt the butter over medium heat. Add in the pecans and stir continuously for (3) minutes, to lightly toast the pecans.
Add in the brown sugar, and stir for an additional (2) minutes to melt the sugar.
Stir in the cinnamon and salt, and add the water.
Cook, stir continuously, until the water is evaporate, 1-2 minutes.
Add in the vanilla and stir to coat.
Remove from the heat and spread evenly on the baking sheet.
Bake for 5-7 minutes, until fragrant and lightly crisp.
Remove from oven and allow to cool completely on the baking sheet.
I prep these and store in large Mason Jar for salads, snacks, and other yummy recipes. Note: Store airtight at room temperature for up to (7) days Salad: Prep Time: 15 minutes Spring Mix, field greens, kale, spinach, or even romaine lettuce can be used. How much depends on the amount of guests you want to serve. Dressing yields plenty for several meals throughout your week. Ingredients:
Spring Mix. Large Salad: Large Container Size of Greens
(1) Cup Sliced Strawberries (I even add blueberries)
(1/2) Cup semi Chopped Candied Pecans (FYI: You decided if you want chopped pecans or not. Depends on you.)
(1/2) Cup Blue Cheese Crumbles or Gorgonzola Crumbles (Cheese can be brought in small block form and make into crumbles)
This salad can be made smaller in size or larger depending on your amount needed and ingredients are adjustments by your own desire of ingredients favorites. I usually leave cheese on side for events and allow guests to add on cheese accordingly to their personal needs. Any Protein of choice can be added on top to make this Simply Fresh Spring Strawberry Salad Delight as a main entree. This beautiful salad pairs nicely with the 2020 Raeburn Chardonnay from Russian River Valley. For those Red Wine lovers the 2019 Raeburn Pinot Noir, Russian River Valley can be paired delightfully with this salad with a beautifully grilled chicken breast on the barbecue or event a smoked pork loin sliced and placed on top.
